Merry Christmas everyone! I know so many people who does not like Christmas, but for some reason I started to really this time of year few years back. I do not know, maybe it is because I do not stress so much about my body and all the food? Anyway I hope you are having good time and that you also like Christmas time as much as I do. Today I have for you this awesome simple recipe for low fat low carb Christmas cookies.
Ingredients
- ½ cup water
- 2 tsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp ground cloves
- 2 oz. butter
- 1¼ cups (5 oz.) almond flour
- ¾ cup (5½ oz.) erythritol
- ½ cup (12⁄3 oz.) coconut flour
- 1 tbsp ground psyllium husk powder
- 1 tsp baking soda
- 1 egg white
Instructions
- Mix the water and spices in a really small saucepan. Bring it to boil. Remove from heat and add the butter. Stir it until it is melted. The cinnamon will make the consistency a bit slimy.
- Mix all of the dry ingredients in a separate bowl. Add the spice mixture and egg white. Mix it all thoroughly and shape the dough into a nice ball. Cover with plastic wrap and refrigerate it overnight to let the flavors mature. This is not necessary step, but believe me it will taste much better if you do.
- Preheat the oven to 300°F (150°C).
- Cut the dough in half and use a rolling pin to flatten the dough. Placing the dough between two pieces of parchment paper is in my experience the easiest way how to do this. When flattened, the dough should be about 1/8 inch (3 mm) thick. Using cookie cutters, cut the gingerbread cookies into shapes. Use a spatula to carefully move them to a baking sheet lined with parchment paper.
- Bake the cookies for about 7-9 minutes or until they are lightly browned. They must be only lightly browned, it is very easy to burn them. Lower the heat of your owen to 200°F (100°C) and continue to bake the cookies for about 30 minutes or until crisp depending on the size and thickness of the cookies. You need to watch them carefully, because it is very easy to burn them since thickness is so low.
- Let the cookies cool completely on a cooling rack before serving or decorating them. I do not suggest eating them the same day, next day or even later they taste the best. Enjoy this recipe, they really taste wonderful and they are good for your body as well. It is not true that healthy low carb diet must taste awful.
