Those of you who follow my blog know that I have been fighting with my weight for many years, pretty much since I was a child until late 2017 when I finally started to win. Merry Christmas everyone! I know so many people who does not like Christmas, but for some reason I started to really this time of year few years back. Today I have for you this awesome simple recipe for low fat low carb Christmas cookies. Ingredients ½ cup water 2 tsp ground cinnamon 2 tsp ground ginger 2 tsp ground cloves 2 oz. butter 1¼ cups (5 oz.) almond flour ¾ cup (5½ oz.) erythritol ½ cup (1 2 ⁄ 3 oz.) coconut flour 1 tbsp ground psyllium husk powder 1 tsp baking soda 1 egg white Instructions Mix the water and spices in a really small saucepan. Bring it to boil. Remove from heat and add the butter. Stir it until it is melted. The cinnamon will make the consistency a bit slimy. Mix all of the dry ingredients in a separate bowl.
